
Greek Jeweled Rice

1Ingredients
- 2 cups basmati rice
- 5-6 threads Krokos Kozani (Greek saffron)
- 3 cups chicken broth or water
- 1 tsp salt
- 2 tbsp EVGE olive oil
- 2 large onions, finely chopped
- 2 large carrots, diced small
- For the candied orange zest:
- Zest of 2 oranges, sliced into thin strips
- 3 tbsp sugar
- 3 tbsp water
- For finishing:
- 1/2 - 1 cup raisins, currants, or golden sultanas
- 1 1/2 cups coarsely chopped toasted almonds

This Greek-styled jeweled rice is a showstopper — golden from saffron, studded with jewel-like bits of carrot, candied orange zest, raisins, and almonds. It's perfect alongside grilled meats or as the centerpiece of a vegetarian meal.

Preparing the Saffron Rice

Dissolve the saffron threads in 1 cup warm water. Let steep for 15 minutes — the water will turn a beautiful golden color.

Place rice in a saucepan with the chicken broth (or water), salt, and the saffron with its soaking water.

Bring to a boil, covered.

Reduce heat to low and cook until all the water has been absorbed — about 15 minutes.

Remove from heat and let sit, covered, for 5 minutes.
Preparing the Vegetables
While the rice cooks:

Heat the olive oil in a wide skillet over medium heat.

Sauté the onion and carrot until soft, about 8-10 minutes.
Making the Candied Orange Zest

Blanch the orange zest strips in a small pot of boiling water for 1 minute.

Remove and drain. Repeat the blanching two more times — this removes bitterness.

In a small saucepan, heat the sugar and water together over low heat until the sugar dissolves.

Add the blanched zest and cook for 7-8 minutes, or until the syrup is thick and the zest is translucent.

Drain the zest.
Assembling
Combine the saffron rice, sautéed vegetables, candied orange zest, raisins, and toasted almonds.
Toss gently to distribute everything evenly. Taste and adjust salt if needed.
About Krokos Kozani
Greek saffron, called Krokos Kozani, comes from the region of Kozani in northern Greece. It's considered some of the finest saffron in the world.
If you can find it, use it. The flavor and color are exceptional. Regular saffron works too.
