
Orange & Olive Oil Koulourakia

- 120g (1/2 cup + 1 tbsp) EVGE extra virgin olive oil
- Zest from 2 oranges (and 1 lemon if you love citrus)
- 120g (1/2 cup) freshly squeezed orange juice
- 140g (1 1/4 cups) powdered sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 400g (3 cups) flour

Super fast, easy, and delicious cookies — perfect with coffee, tea, or just on their own. You only need one bowl, a kitchen scale, parchment paper, and a cookie sheet.
This recipe makes 20 cookies, but you can easily double it!
Why These Are Special
These koulourakia are vegan — made without eggs or butter. The olive oil gives them a wonderfully light, crisp texture while the fresh orange zest and juice provide bright citrus flavor.
The Method

In one bowl, mix together:
- Olive oil
- Orange zest (and lemon zest if using)
- Orange juice
- Powdered sugar
- Baking powder
- Baking soda

Mix well until everything is combined.

Add the flour (sift if needed) and mix until just incorporated.

Preheat oven to 350°F.

Line a cookie sheet with parchment paper.

Roll the dough into balls. Flatten them if you want extra crunchy cookies.

Bake for 15-20 minutes until lightly golden.

Let cool on a wire rack.
Tips
- For crunchier cookies, flatten them before baking
- For softer cookies, keep them as balls and bake for the shorter time
- Store in an airtight container — they keep well for a week
